Ingredients: 500 grams pumpkin (raw, peeled and grated), 1 red onion (roughly chopped), 1 clove of garlic (roughly chopped), 2 teaspoon cumin powder, 1 teaspoon cayenne pepper, 1 tablespoon gold syrup, 2 teaspoon paprika powder, 250 grams black beans, 25 gram pumpkin seeds (roasted), 1 tbsp broken linseed + 3 tbsp water (mix and set aside for 10 minutes), salt and pepper to taste.

Step 1

Preheat the oven to 200 degrees and line a baking tin with baking paper.

Step 2

Place the grated pumpkin in the food processor together with the onion, garlic and black beans. Turn on the food processor. It doesn't have to be completely finely ground.

Step 3

Add the broken linseed paste, syrup gold and the spices and mix well. Taste to see if it suits your taste. Otherwise, add some spices, syrup gold and finish with salt and pepper.

Step 4

Finally, add the roasted pumpkin seeds. If the mixture is too wet, you can add some oatmeal.

Step 5

Make 4 giant burgers or 8 smaller ones. I rolled 16 balls and made 3 burgers. Place them on the lined baking tray and place in the oven for 30 minutes. Turn after 15 minutes.

Step 6

Don't you eat all the meatballs/burgers? Freezing is also possible! For example, add them to your salad, take them with you as a snack or fill your sandwich, wrap or taco shell with these pumpkin balls and/or burgers.
