12 cake slices
Ingredients: Base: 170 grams of raw, unroasted almonds, 50 grams of rauze, unroasted cashew nuts, 60 grams of coconut grater, 10 grams of extra sweet (or 120 ml of syrup gold), pinch of salt, liquid stevia vanilla (6-8 drops) and 60 ml of coconut oil (molten).
Filling: 245 grams ripe avocado, 180 ml coconut oil (melted), 110 ml lemon juice, zest of 1 lemon, 2 teaspoons extra sweet (or 60 ml syrup gold) and 300 grams silken tofu (1 pack, optional).
Top: crushed pistachios and coconut grater
Step 1
I used this cake pan: https://www.dille-kamille.nl/nl/taart-gebak-zoet-hart/taartvorm-losse-grond-rond-anti-aanbak-o-24-cm-5698. html line it with baking paper.
Step 2
Start working on the bottom first. First put the almonds, cashew nuts, salt, extra sweet and coconut grater in the food processor. Grind finely. Then add the remaining ingredients. When you have a sticky substance, it's ready.
Too dry? Then add some coconut oil (melted) or water. It certainly shouldn't be too wet!
Step 3
Press the dough into the pie tin and place in the refrigerator for 10 minutes.
Step 4
Free the food processor from grease and get started with the pie filling.
Step 5
Peel the avocados and remove the pit. Place the pulp in the food processor together with the other ingredients. When everything is well mixed together and you have an even mass, it is ready. Always taste it for seasoning. Add some sweetener if desired.
Step 6
Remove the base from the refrigerator and pour your avocado smoothie on the base. Gently shake the pie crust and place the pie in the refrigerator for 2.3 hours.
Step 7
You can cut out 12 pieces of cake. Please note, because of the avocado you cannot keep the cake for a long time. Either you eat the cake within 2 days, or you freeze the remaining pieces. Would you like to enjoy a piece of cake later? Then remove the cake from the freezer 1 hour before eating.
Step 8
You can of course also take a piece with you to work. Then store your boho tiffin in the refrigerator, then your piece of cake will be the tastiest.
