16 bites
Ingredients:
Base: 250 grams of white beans (rinsed and drained), 50 grams of oatmeal, 75 grams of dates, 1 teaspoon of peanut butter, 1 teaspoon of vanilla and 1 tbsp of coconut sugar.
Caramel layer: 100 grams of dates, 1 teaspoon of vanilla, pinch of salt, 1 teaspoon of peanut butter, 10 tbsp of coconut milk (canned, light) and 50 grams of peanuts (unsalted).
Chocolate layer: 50 ml coconut oil (melted), 2-3 tbsp agave syrup and 12.5 grams raw cocoa powder.
Step 1
Cover a cake tin with baking paper. I used a square one (20x20).
Step 2
Start working on the soil first. Place all ingredients in the food processor and process until sticky.
Step 3
Divide the dough over the base and place in the freezer.
Step 4
Place all ingredients except the peanuts and coconut milk in the food processor. Turn this on. Carefully pour in the coconut milk. Do you want a slightly thicker caramel layer? Then do not pour all the coconut milk with the dates. I have used everything. When you have a caramel-like substance you are done.
Step 5
Remove the base from the freezer and pour the caramel layer over the base. Spread evenly. Now divide the peanuts over the caramel layer and put back in the freezer. Now let it harden in the freezer for at least 60 minutes.
Step 6
10 minutes before you take the base out of the freezer, you can start working on the chocolate layer. Place the melted coconut oil together with the agave syrup and raw cacao in a bowl and mix well. Quickly pour the chocolate over the frozen caramel layer and spread evenly. Do this quickly, because the chocolate freezes immediately.
Step 7
Place back in the freezer. Let it harden thoroughly.
Step 8
If you want to cut the bites, use a good knife and hold it under the warm tap. I got 16 bites out of it. You can also cut them larger or smaller.
Step 9
Store the snicker bites in a plastic container in the freezer. Would you like to eat one? Then remove from the freezer 10 minutes in advance. Also delicious to eat (ice) cold. A snack ice cream! Are you having visitors? Then serve your snicker bites in your Boho Tiffin.
