Ingredients:
- 150 grams of almond flour
- 250 grams (gluten-free) oatmeal
- 1 teaspoon vanilla
- 2 teaspoon baking soda
- 3 teaspoon gingerbread spices
- 2 ripe bananas
- 175 grams sweet potato (peeled and boiled)
- 75 grams of raisins (or other dried fruit).
- A little almond milk to brush the cookies with before they go into the oven.
Step 1
Turn on the oven at 200 degrees. Line a baking tray with a sheet of baking paper.
Step 2
Place all dry ingredients in a mixing bowl and mix well.
Step 3
Place 2 ripe bananas and the sweet potato in the food processor and puree it into a smooth emulsion (you can also use it in a blender or with a hand blender).
Step 4
Now add the banana mixture and raisins (or other dried fruit) to the dough and knead with your hands into 1 large ball. Too wet? Then add some oatmeal.
Step 5
Make 10 equal balls from the dough and flatten them slightly on the baking tray. Brush them with some almond milk before they go into the oven.
Step 6
Place the baking tray in the oven and after 20-30 minutes your sweet potato cookies are ready! Kids proof guaranteed!!!
