January is the month of healthy eating, good intentions and fresh starts! It is the month in which we all pick up our healthy lifestyle and commit to it 100% again. This couscous salad fits perfectly into your healthy lifestyle and is therefore perfect as a brunch dish or side dish during a nice dinner.

What do you need for 2 people?
- 200g couscous
- 225g halloumi
- 1 zucchini
- 1 eggplant
- 250g chestnut mushrooms
- 100g kalamon olives
- 1/2 lemon
- a good quality olive oil
- honey
- salt pepper
1. Prepare the couscous as described on the packaging. Cut the zucchini, eggplant and mushrooms into cubes and grill the cubes in a grill pan with 1 tablespoon of olive oil. Season with salt and pepper.
2. Let the couscous and grilled vegetables cool. Place the couscous in a bowl and stir the grilled vegetables and kalamon olives into the couscous. Season with salt, pepper, 2 tbsp olive oil, 2 tbsp honey and the juice of 1/2 lemon.
3. Finally, cut the halloumi into slices, grill it until the slices are golden brown and then add it to the salad.
