Sundays, you gotta love them right?! Wake up quietly and start with a cup of tea or coffee, and then start with a nice extensive brunch. I don't need to explain why my favorite meal of the day is still brunch!

Today I have a delicious recipe in store for you, with a fruit that I really love, but actually use far too little in my recipes. Namely: plums! Last weekend I visited the Philips Fruit Garden in Eindhoven (hotspot tip!) and I took a bag of delicious plums with me, ready to make a delicious recipe with them. And then I came across this healthy plum and banana bread.

And this recipe is also ideal for freezing in slices, so that you have healthy snacks for the whole week for the office or at home on the couch with a cup of tea.

Tip: go to the fruit shop and pick up a bag of delicious plums, because they really taste so much better than the plums from the supermarket.

What do you need?

- 6 plums
- 4 bananas
- 150 grams of flour or spelled flour
- 3 eggs
- 100 grams of oatmeal
- 2 teaspoons cinnamon
- 2 tablespoons of honey
- A pinch of baking powder

1. Preheat the oven to 180 degrees.

2. Mash 4 bananas finely and add the eggs. Mix this together well. Then add the flour, oatmeal, cinnamon, honey and baking powder and mix with a mixer into a fine batter.

3. Remove the pit from the plums and cut the plums into small cubes. Slowly fold this into the batter and pour the batter into a cake tin.

4. Bake the plum and banana bread for about 50-60 minutes until golden brown!
