I have tried many recipes, but I just couldn't make the perfect fluffy pancakes that I love so much. You can really wake me up for American pancakes. And preferably with powdered sugar, honey and lots of fruit. After a lot of trying (and tasting) in the kitchen, I came up with this delicious recipe for these fluffy coconut pancakes. The perfect brunch dish for this lovely Sunday and if you can't eat it all? Take the leftovers with you to the office or to the park tomorrow. Win win!

What do you need? (for 1 person)

- 2 egg whites
- 1 egg yolk
- 3 tbsp spelled flour
- 1/2 tsp baking powder
- A pinch of baking soda
- 3 tbsp almond milk
- a bag of vanilla sugar
- 1 tsp vanilla extract
- 2 tbsp coconut grater
- fruit of your choice
- powdered sugar
- honey
- knob of butter

1. In a bowl, mix the egg yolk, spelled flour, baking powder, baking soda, almond milk and vanilla sugar thoroughly with a whisk. Take another bowl and mix the 2 egg whites until stiff.

2. Carefully stir the beaten egg white into the egg yolk mixture in 3 parts with a spatula until it has become one whole. Add 1 tbsp vanilla extract and the coconut grater and carefully stir this into the mixture with the spatula.

3. Melt a knob of butter in a frying pan. Fry the pancakes over low heat until golden brown. You can make about 3 pancakes from this batter, a perfect stack for 1 person. Decorate the pancakes with some grated coconut, icing sugar and fruit as desired. Enjoy girls!
