Inspired by the delicious and healthy cottage cheese buns from Yara from @homeofafoodie, I baked these healthy apple cinnamon buns. Perfect for breakfast with a spoonful of cottage cheese, as a healthy snack with coffee, but they are tastiest when they have just come out of the oven and are still nice and warm! Just out of hand :)
What do you need?
- 3 apples
- 1 banana
- 250g Optimel cottage cheese with lemon 0% fat
- 250g spelled flour
- 2 tbsp cinnamon
- 2 eggs
- a bag of baking powder
- 3 tbsp Greensweet Stevia (brown), but any sweetener is good
- a pinch of salt
- powdered sugar
- baking paper
1. Preheat the oven to 160 degrees. Peel the apples and banana and cut them into small pieces (I used a cutting machine, very easy).
2. Mix 250g cottage cheese with lemon, 2 eggs, a bag of baking powder, cinnamon, a pinch of salt and stevia well in a large bowl. Then add the spelled flour and the pieces of apple & banana and stir with a whisk until you get a nice sticky mixture.
3. Scoop small balls (with a spoon or an ice cream scoop) from the batter and place them on a piece of baking paper. Bake the apple cinnamon balls for 25-30 minutes until golden brown and enjoy!
