With the hot days this summer, nothing is as nice as tasty fresh and light meals. Even during brunch I love to put a salad or two on the table. This way you immediately get a good dose of vegetables and/or fruit in the colors of the rainbow! And this salad with orzo (orzo is my new thanggggg) is the perfect snack for this lovely Sunday and super easy to make (and nice to take to the office/picnic tomorrow)!
What do you need?
- 150g orzo
- a bowl of cherry tomatoes
- 200g cucumber
- 200 g feta cheese
- a large red onion
- 100g Greek kalamon olives
- olive oil, salt and pepper
1. Bring a pan of water and salt to the boil and add the orzo to the water as soon as the water boils. Cook the orzo for about 11 minutes and let it cool thoroughly.
2. Place the orzo in a large bowl and cut all the vegetables into small cubes and add them to the bowl as well. Crumble the feta over the vegetables and finish with the kalamon olives.
3. Season the salad with olive oil, salt and pepper. Lets eat!
