Even as a little girl I loved ricotta! On a sandwich with chicken fillet, in a healthy salad or as a basic sauce on a pizza. Yum! And even though I don't see it very often as an ingredient in a recipe, I use ricotta as much as possible in my recipes because I like it so much. These healthy egg wrap rolls are the perfect low-carb and light brunch for me. This ricotta spread is also delicious as part of your snack board, for example on a warm piece of baguette.
What do you need? (for 1 person)
- 2 eggs
- A dash of milk
- 1 lemon
- 50 grams of ricotta
- Salad
- Olive oil
- Salt and pepper
1. Beat the eggs with a small dash of lemon juice and milk in a bowl.
2. Heat 1 tbsp olive oil in a frying pan and fry the egg mixture over medium heat. Is your egg wrap ready? Then let it cool on a plate.
3. Now start with the ricotta mixture. Place 50 grams of ricotta in a bowl and stir briefly. Add salt, pepper and a little lemon zest to taste. Stir the mixture well again.
4. Spread the ricotta mixture on the center of the egg wrap and sprinkle a large handful of lettuce over it. Now roll up the wrap and cut the wrap into small pieces. Or in two larger pieces. It's up to you!
