A Sunday without an egg in the morning is not a real Sunday for me. An omelette, a soft-boiled egg or a fresh egg salad on bread, please wake me up for it! Today I made these half avocados with egg, feta and truffle oil from the oven. A perfect brunch for this sunny, but cold Sunday!
Requirements (for 1 person):
- 1 large and ripe avocado
- 1 egg
- a little bit of feta (to taste)
- salt, pepper and paprika powder
- truffle oil (optional.
1. Preheat the oven to 200 degrees.
2. Cut the avocado in half and remove the pit. Make the hole in the center slightly larger by scooping out a little bit of avocado with a spoon.
3. Place your egg in a small bowl and beat it together a few times with a fork. Don't mix this together too much! Then carefully divide the egg between the two avocado halves and make sure that the egg does not go over the edge.
4. Garnish the avocados with crumbled feta, salt, pepper and paprika powder.
5. Place the avocados in the oven and bake for about 15 minutes. The egg will still be a little soft. Don't you like it when the egg is still soft? Then leave the avocados in the oven for a few minutes longer.
6. Remove them from the oven and garnish them with some extra feta, paprika powder and a few drops of truffle oil.
