May 10 is Mother's Day and National Spekkoek Day! And as a proud Indo, we naturally celebrate both occasions at home. A while ago I made finger-licking Indonesian French toast with spekkoek liqueur, but this recipe is also 100% a keeper: a smoothie bowl with spekkoek and fried banana!

What do you need?

- 2 frozen bananas

- 1 fresh banana

- 100ml almond milk

- 100g bacon biscuit

- 1 tsp coconut grater

- a dash of spekkoek liqueur (you can also make this recipe without spekkoek liqueur)

- a knob of butter

1. Cut the fresh banana into slices and fry in a pan with a knob of butter until golden brown. Add a dash of spekkoek liqueur and let it simmer for about 2 minutes over low heat.

2. Place the 2 frozen bananas and almond milk in a blender and blend into a velvety smooth smoothie. Cut the bacon biscuit into small cubes.

3. Place the smoothie in a bowl and decorate the smoothie bowl nicely with the fried banana slices and the bacon biscuit cubes. Finish the smoothie bowl with some grated coconut to taste.
