Autumn salad with mushrooms

Hi, my name is Moniek and I am 32 years old. I live in Doesburg with my husband Michael and 2 children Sophie, 2 years old, and Mike, 4 months old.

Becoming pregnant was not as obvious as we thought. A long process of hospital visits, examinations and hormone treatments followed for both children, which also added a lot of weight.

3 months ago I started the Instagram account @my_fit_mommy_journey because I want to be a fitter mom for my children and husband. I have now lost 15 kilos and feel much better about myself. And with my account I hope to inspire others who, like me, want to find a healthier version of themselves.

The recipe I made is one of my favorite recipes, because it is a perfect dish for these cold days, it contains many vegetables and is low in carbohydrates. Win-win-win, right?!

Autumn salad with mushrooms

Ingredients for 2 people

200 grams of mushroom mix

100 grams of mixed arugula salad

50 grams of feta

50 grams of walnuts

1 shallot

200 grams of asparagus broccoli

2 tbsp white wine vinegar

3 tbsp olive oil

2 tbsp pesto

salt and pepper to taste

What should you do?

1. Cut the shallot into rings and cut the mushrooms into slices. Heat 2 tablespoons of olive oil or butter in a frying pan and fry the shallot and mushrooms until golden brown.

2. Add the pesto and remove from the heat.

3. In another frying pan, fry the asparagus broccoli with 1 tablespoon of olive oil, this should be nice and crispy.

4. Place the mixed lettuce in a bowl, add the mushroom mixture, the asparagus broccoli and the walnuts and mix well.

5. Add the white wine vinegar and salt and pepper to taste and finish with some crumbled feta.
