Ingredients: 225 grams cauliflower (weighed raw, finely ground in the food processor), 35 grams sorghum flour (or other flour), 3 tbsp chia seeds + 6 tbsp water (make a mixture and let it stand for 10 minutes. This can also be done with broken linseed ), 1 clove garlic (pressed), 1 teaspoon Herb de Provence and salt and pepper to taste.

Sweet potato puree: 150 grams of sweet potato (peeled and cut into cubes, then boiled), 1-2 dates (how sweet do you want it?), 1 teaspoon of cumin powder and salt and pepper to taste.

Topping: 50 grams of chard (leaf only, finely chop), 50 grams of chickpeas (rinsed), pinch of garlic and cumin powder, salt and pepper to taste.

Optional: chili flakes (when the pizza comes out of the oven).

Step 1

Preheat the oven to 180 degrees. Line the baking tin with baking paper.

Step 2

Place a pan with water on the stove. Is it cooking? Then put the finely ground cauliflower in the water. Let cook for 5 minutes.

Step 3

Grab a bowl, colander and a clean tea towel (or a nut bag). Add the cauliflower here. Squeeze all the moisture from the cauliflower. Then put the cauliflower in a bowl and let it cool.

Step 4

Add the flour, chia seed mixture, garlic, herbs and salt and pepper to the cauliflower. Knead a firm ball with your hands. Is it too wet? Then add some more flour. Too dry? Add a little water.

Step 5

Make a pizza shape on the lined baking tin and place your base in the oven for 30 minutes. You can turn the base halfway through so that it does not bulge and becomes nicely brown on both sides.

Step 6

In the meantime, you can continue with your sweet potato puree. Boil the sweet potato pieces for about 20 minutes until al dente. Drain and put these pieces in the food processor with the date(s) and cumin powder. Turn on the food processor. When you have a puree-like substance, taste it for seasoning. Otherwise, add some salt and pepper.

Step 7

The chard leaves are finely chopped. Take a frying pan and put some water or oil in it. Stir-fry the chard together with the spices and chickpeas. When the chard has shrunk, turn off the heat.

Step 8

Take the pizza base and spread the sweet potato puree on the base. Top it off with the chard mixture and put your pizza in the oven for 15 minutes.

Step 9

Sprinkle some chili flakes over it and enjoy your healthy pizza!
