Ingredients: 150 ml coconut milk* (from a can), 150 ml water, 3 tbsp chia seeds, 50 grams raw pumpkin, 1 teaspoon pumpkin spices and 6-8 drops liquid stevia vanilla.

Topping: fresh blackberries with homemade granola.

*you can use any plant-based milk for this recipe.

Step 1

Wash and cut the pumpkin into large pieces. The peel does not necessarily have to be removed.

Step 2

Place all ingredients (except liquid stevia and chia seeds) in the blender and make a smooth smoothie. Season to taste with the liquid stevia vanilla and mix it briefly.

Step 3

Pour the smoothie into a boho-tffin bowl and add the chia seeds. Stir well and let it stand for 10 minutes. After 10 minutes, stir well again and then put the bowl in the refrigerator and let your pudding set.

Step 4

Finish your chia pudding with whatever you like. I opted for fresh blackberries and some homemade granola.

Make this chia pudding the night before, so you can be sure that your pudding is good. Do you eat out? No problem for your boho tiffin. Still afraid it will leak? Then cover the bowl with some cling film and close it.
