Ingredients : 450 grams of spelled flour, 1 teaspoon of tartar baking powder, 1 teaspoon of baking soda + 1 tablespoon of apple cider vinegar, 40 grams of raw cocoa, 100 ml of almond milk, 3 bananas, 125 ml of apple sauce (made from 2 apples), 50 ml of aquafaba .
Do you want it sweeter? Then add 100 ml coconut syrup, rice syrup or agave syrup instead of 100 ml almond milk.
Is the batter too dry? Then add some plant-based milk or water (little by little). If the batter is too wet, add some more flour.
Step 1
Turn on the oven at 180 degrees. Line a cake tin with baking paper.
Place all dry ingredients in a mixing bowl and mix together (except the baking soda + apple cider vinegar).
Step 3
Peel the apples and put them in a saucepan with a layer of water. Bring to boil. When the apples are done, you can drain the water and puree the apples into a pulp.
Step 4
Mash the bananas in a separate bowl and add the syrup or milk. You can now also stir in the applesauce.
For the aquafaba you need 50 ml chickpea liquid . Mix this in a separate bowl until fluffy. Then carefully fold this into the banana mixture.
Now you can stir the banana mixture into the flour.
Finally, put 1 teaspoon of baking soda in a bowl with 1 tablespoon of apple cider vinegar. This is going to fizz nicely. Mix it into the batter and pour the batter into your cake tin. Put it straight into the oven. After about 60 minutes your chocolate banana bread is ready.
Step 8
Let the cake cool briefly before removing it from the mould. Then you can cut 12 pieces out of it.

Take two slices with you to work, appointment or school. Spread them with a layer of peanut butter, yummy in your B oho-Tiffin .
