Ingredients: 1 sweet pepper, 1 little gem, 50 grams artichoke (from a jar), 50 grams cherry tomatoes, ½ avocado, 50 grams vegan feta, 25 grams cashew nuts.
Dressing: 50 grams soy yoghurt, 1 tbsp mustard, ½ tablespoon apple cider vinegar, salt and pepper to taste.
Step 1
Wash the vegetables and cut them finely or coarsely as desired. You can also cut the vegan feta into cubes.
Step 2
Place everything in a large bowl and stir gently.
Step 3
Pour the soy yoghurt into a bowl and stir in the mustard and apple cider vinegar. Season further with salt and pepper.
Step 4
Pour the dressing over your salad and toss carefully. Spoon your salad into your Boho Tiffin and seal it for when you want to take it with you.
